SAYUR LODEH - traditional Indonesian vegetable curry
Sayur lodeh is a traditional Indonesian vegetable curry made with mixed vegetables cooked in coconut milk and spices. Here's a recipe to make sayur lodeh:
Ingredients:
- 2 cups mixed vegetables (such as green beans, cabbage, carrots, chayote squash, and tofu), cut into bite-sized pieces
- 200ml thick coconut milk
- 2 cups water or vegetable broth
- 2 tablespoons cooking oil
- 3 shallots, finely sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced (adjust according to your spice preference)
- 2 bay leaves
- 1 stalk lemongrass, bruised
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon palm sugar or brown sugar
- Salt to taste
Instructions:
Prepare the Vegetables: Wash and cut the mixed vegetables into bite-sized pieces. If using tofu, cut it into cubes.
Prepare the Spice Paste: In a mortar and pestle or food processor, grind the shallots, garlic, red chilies, turmeric powder, and coriander powder into a smooth paste.
Cook the Spice Paste: Heat the cooking oil in a large pot over medium heat. Add the ground spice paste and sauté until fragrant, about 2-3 minutes.
Add Coconut Milk and Water/Broth: Pour in the thick coconut milk and water or vegetable broth. Stir to combine.
Add Aromatics: Add the bay leaves and bruised lemongrass to the pot. Stir to incorporate the flavors.
Add Vegetables: Add the mixed vegetables to the pot. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer until the vegetables are tender, about 10-15 minutes.
Seasoning: Add palm sugar and salt to taste. Adjust the seasoning according to your preference.
Serve: Once the vegetables are cooked through and the flavors have melded together, remove the pot from the heat. Discard the bay leaves and lemongrass stalk. Transfer the sayur lodeh to a serving dish.
Garnish and Serve: Garnish with fried shallots or sliced red chilies if desired. Serve hot with steamed rice.
