SAYUR LODEH - traditional Indonesian vegetable curry

 Sayur lodeh is a traditional Indonesian vegetable curry made with mixed vegetables cooked in coconut milk and spices. Here's a recipe to make sayur lodeh:


Ingredients:

  • 2 cups mixed vegetables (such as green beans, cabbage, carrots, chayote squash, and tofu), cut into bite-sized pieces
  • 200ml thick coconut milk
  • 2 cups water or vegetable broth
  • 2 tablespoons cooking oil
  • 3 shallots, finely sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced (adjust according to your spice preference)
  • 2 bay leaves
  • 1 stalk lemongrass, bruised
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon palm sugar or brown sugar
  • Salt to taste

Instructions:

  1. Prepare the Vegetables: Wash and cut the mixed vegetables into bite-sized pieces. If using tofu, cut it into cubes.

  2. Prepare the Spice Paste: In a mortar and pestle or food processor, grind the shallots, garlic, red chilies, turmeric powder, and coriander powder into a smooth paste.

  3. Cook the Spice Paste: Heat the cooking oil in a large pot over medium heat. Add the ground spice paste and sauté until fragrant, about 2-3 minutes.

  4. Add Coconut Milk and Water/Broth: Pour in the thick coconut milk and water or vegetable broth. Stir to combine.

  5. Add Aromatics: Add the bay leaves and bruised lemongrass to the pot. Stir to incorporate the flavors.

  6. Add Vegetables: Add the mixed vegetables to the pot. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer until the vegetables are tender, about 10-15 minutes.

  7. Seasoning: Add palm sugar and salt to taste. Adjust the seasoning according to your preference.

  8. Serve: Once the vegetables are cooked through and the flavors have melded together, remove the pot from the heat. Discard the bay leaves and lemongrass stalk. Transfer the sayur lodeh to a serving dish.

  9. Garnish and Serve: Garnish with fried shallots or sliced red chilies if desired. Serve hot with steamed rice.

Tips:

  • You can customize the vegetables used in sayur lodeh based on your preference and what's available. Some popular additions include green beans, cabbage, carrots, chayote squash, and tofu.
  • Adjust the amount of red chilies according to your spice preference. You can remove the seeds for a milder flavor.
  • If you prefer a thicker curry, you can reduce the amount of water or vegetable broth used.
  • Sayur lodeh is often served as part of a larger Indonesian meal with other dishes and steamed rice.
