SAYUR PAKU PAKIS

Sayur paku pakis, also known as fern shoots or fiddlehead ferns, is a popular Indonesian dish made from young fern leaves. Here's a simple recipe to make sayur paku pakis:


Ingredients:

  • 300g paku pakis (fern shoots), washed and trimmed
  • 2 tablespoons cooking oil
  • 3 cloves garlic, minced
  • 2 red chilies, sliced (adjust according to your spice preference)
  • 2 shallots, thinly sliced
  • 200ml coconut milk
  • Salt to taste
  • Sugar to taste

Instructions:

  1. Prepare the Fern Shoots: Trim any tough stems from the paku pakis and wash them thoroughly under running water. Drain and set aside.

  2. Cook the Fern Shoots: In a large pan or wok, heat the cooking oil over medium heat. Add the minced garlic and sliced shallots, and sauté until fragrant and lightly golden brown.

  3. Add the Fern Shoots: Add the paku pakis to the pan and stir-fry for about 3-5 minutes until they start to wilt and become tender.

  4. Add Coconut Milk: Pour in the coconut milk and stir well to combine with the fern shoots. Let the mixture simmer gently over low heat for another 5-7 minutes, allowing the flavors to meld together.

  5. Season: Season the sayur paku pakis with salt and sugar to taste. Adjust the seasoning according to your preference.

  6. Serve: Once the fern shoots are cooked through and the sauce has thickened slightly, remove the pan from the heat. Transfer the sayur paku pakis to a serving dish.

  7. Garnish (Optional): Garnish with sliced red chilies for an extra kick of spice and color.

  8. Serve: Serve the sayur paku pakis hot with steamed rice as a side dish.

Tips:

  • Be sure to wash the paku pakis thoroughly to remove any dirt or debris.
  • If you prefer a thicker sauce, you can reduce the amount of coconut milk or simmer the dish for a longer time.
  • Feel free to customize the dish by adding other ingredients such as sliced carrots, tofu, or tempeh.
  • Sayur paku pakis pairs well with other Indonesian dishes such as fried fish or chicken, and sambal for extra flavor.
