TUMIS JAMUR TIRAM

 Here's a simple recipe for tumis jamur tiram, a delicious Indonesian stir-fry dish featuring oyster mushrooms:


Ingredients:

  • 300g oyster mushrooms, cleaned and sliced
  • 2 tablespoons cooking oil
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, sliced (adjust according to your spice preference)
  • 1 teaspoon shrimp paste (terasi), optional
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Salt to taste
  • Sugar to taste
  • Chopped green onions or cilantro for garnish

Instructions:

  1. Prepare the Oyster Mushrooms: Clean the oyster mushrooms by wiping them with a damp cloth or rinsing them briefly under running water. Slice them into bite-sized pieces and set aside.

  2. Heat the Oil: Heat the cooking oil in a large pan or wok over medium heat.

  3. Sauté Aromatics: Add the minced garlic, sliced shallots, and sliced red chilies to the pan. Sauté until fragrant and the shallots are translucent, about 2-3 minutes.

  4. Add Oyster Mushrooms: Add the sliced oyster mushrooms to the pan. Stir-fry for about 5-7 minutes until the mushrooms are tender and cooked through.

  5. Add Flavorings: If using, add the shrimp paste (terasi) to the pan and stir well to incorporate. Then, pour in the sweet soy sauce (kecap manis) and continue to stir-fry for another 2-3 minutes.

  6. Season: Season the tumis jamur tiram with salt and sugar to taste. Adjust the seasoning according to your preference.

  7. Garnish: Transfer the tumis jamur tiram to a serving dish and garnish with chopped green onions or cilantro for added freshness and flavor.

  8. Serve: Serve the tumis jamur tiram hot with steamed rice as a side dish or as part of a larger Indonesian meal.

Tips:

  • You can customize this dish by adding other ingredients such as sliced bell peppers, carrots, or tofu.
  • Adjust the amount of red chilies according to your spice preference. You can also remove the seeds for a milder flavor.
  • If you don't have sweet soy sauce (kecap manis), you can substitute with a mixture of soy sauce and brown sugar.
  • Tumis jamur tiram is best enjoyed immediately after cooking while the mushrooms are still tender and flavorful.
