GULAI PINDANG
Gulai pindang is a traditional Indonesian dish that features pindang fish (salted and fermented fish) cooked in a rich and flavorful curry sauce. Here's a recipe for making gulai pindang:
Ingredients:
- 500g pindang fish (salted and fermented fish), cleaned and cut into serving-sized pieces
- 400ml coconut milk
- 2 cups water
- 2 tablespoons cooking oil
- 2 kaffir lime leaves
- 2 bay leaves
- Salt to taste
- Sugar to taste
Spice Paste (Bumbu):
- 5 shallots
- 3 cloves garlic
- 2 red chilies (adjust according to your spice preference)
- 2 inches galangal
- 2 inches turmeric
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon white peppercorns
- 1 teaspoon salt
Instructions:
Prepare the Spice Paste: Blend or grind all the spice paste ingredients into a smooth paste.
Cook the Spice Paste: Heat the cooking oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 5-7 minutes.
Add Coconut Milk and Water: Pour in the coconut milk and water, stirring to combine with the spice paste.
Add Aromatics: Add the kaffir lime leaves and bay leaves to the pot. Stir well to incorporate the flavors.
Simmer: Bring the mixture to a simmer, then reduce the heat to low. Let the sauce simmer gently, uncovered, for about 15-20 minutes to allow the flavors to meld together.
Add Pindang Fish: Carefully add the pindang fish pieces to the pot. Allow them to simmer in the sauce for another 15-20 minutes, allowing the flavors to infuse into the fish.
Adjust Seasoning: Taste the gulai pindang and season with salt and sugar according to your preference. Adjust the seasoning as needed.
Serve: Once the fish is cooked through and the sauce has thickened slightly, remove the pot from the heat. Serve the gulai pindang hot with steamed rice.
Tips:
- Pindang fish can be quite salty due to the salting and fermentation process. Be cautious when adding additional salt to the dish.
- You can add other ingredients such as potatoes, eggplant, or tofu to the gulai for added texture and flavor.
- Gulai pindang is often served with steamed rice and accompanied by side dishes such as sambal and fresh vegetables.
