GULAI PINDANG

 Gulai pindang is a traditional Indonesian dish that features pindang fish (salted and fermented fish) cooked in a rich and flavorful curry sauce. Here's a recipe for making gulai pindang:


Ingredients:

  • 500g pindang fish (salted and fermented fish), cleaned and cut into serving-sized pieces
  • 400ml coconut milk
  • 2 cups water
  • 2 tablespoons cooking oil
  • 2 kaffir lime leaves
  • 2 bay leaves
  • Salt to taste
  • Sugar to taste

Spice Paste (Bumbu):

  • 5 shallots
  • 3 cloves garlic
  • 2 red chilies (adjust according to your spice preference)
  • 2 inches galangal
  • 2 inches turmeric
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon white peppercorns
  • 1 teaspoon salt

Instructions:

  1. Prepare the Spice Paste: Blend or grind all the spice paste ingredients into a smooth paste.

  2. Cook the Spice Paste: Heat the cooking oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 5-7 minutes.

  3. Add Coconut Milk and Water: Pour in the coconut milk and water, stirring to combine with the spice paste.

  4. Add Aromatics: Add the kaffir lime leaves and bay leaves to the pot. Stir well to incorporate the flavors.

  5. Simmer: Bring the mixture to a simmer, then reduce the heat to low. Let the sauce simmer gently, uncovered, for about 15-20 minutes to allow the flavors to meld together.

  6. Add Pindang Fish: Carefully add the pindang fish pieces to the pot. Allow them to simmer in the sauce for another 15-20 minutes, allowing the flavors to infuse into the fish.

  7. Adjust Seasoning: Taste the gulai pindang and season with salt and sugar according to your preference. Adjust the seasoning as needed.

  8. Serve: Once the fish is cooked through and the sauce has thickened slightly, remove the pot from the heat. Serve the gulai pindang hot with steamed rice.

Tips:

  • Pindang fish can be quite salty due to the salting and fermentation process. Be cautious when adding additional salt to the dish.
  • You can add other ingredients such as potatoes, eggplant, or tofu to the gulai for added texture and flavor.
  • Gulai pindang is often served with steamed rice and accompanied by side dishes such as sambal and fresh vegetables.
