TUMIS BUNCIS (or stir-fried green beans)

 Tumis buncis, or stir-fried green beans, is a simple and delicious dish that's quick to prepare. Here's a basic recipe:


Ingredients:

  • 300g green beans, washed and trimmed
  • 2 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, thinly sliced (adjust according to your spice preference)
  • 2 tablespoons cooking oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Lime wedges for serving (optional)

Instructions:

  1. Prepare the Green Beans: Wash the green beans thoroughly and trim off the ends. Cut the green beans into bite-sized pieces, about 2 inches long.

  2. Heat the Oil: In a wok or large frying pan, heat the cooking oil over medium-high heat.

  3. Sauté Aromatics: Add the minced garlic, sliced shallots, and red chilies to the hot oil. Sauté until fragrant and the shallots are translucent, about 1-2 minutes.

  4. Add Green Beans: Add the green beans to the wok. Stir-fry continuously for about 3-4 minutes until the green beans are tender-crisp.

  5. Seasoning: Add the oyster sauce and soy sauce to the wok. Stir well to combine and coat the green beans evenly with the sauces. Cook for another 1-2 minutes.

  6. Adjust Seasoning: Taste the dish and adjust the seasoning with salt and pepper if necessary.

  7. Serve: Transfer the tumis buncis to a serving dish. Serve hot as a side dish or as part of a larger meal with rice or noodles. Optionally, serve with lime wedges on the side for extra flavor.

Tips:

  • Green beans cook quickly, so be careful not to overcook them. They should be tender-crisp.
  • Adjust the amount of red chilies according to your spice preference.
  • For a vegetarian version, you can omit the oyster sauce or substitute it with vegetarian oyster sauce or soy sauce.
