TUMIS PARE TELUR (stir-fried bitter melon with eggs)

 Tumis pare dan telur, or stir-fried bitter melon with eggs, is a tasty and nutritious Indonesian dish. Here's a recipe for making tumis pare dan telur:


Ingredients:

  • 2 bitter melons (pare), sliced thinly and seeds removed
  • 4 eggs, beaten
  • 2 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, thinly sliced (adjust according to your spice preference)
  • 2 tablespoons cooking oil
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (terasi), optional
  • Salt and pepper to taste

Instructions:

  1. Prepare the Bitter Melon: Slice the bitter melons thinly and remove the seeds. You can also sprinkle a little salt on the sliced bitter melons and let them sit for about 10 minutes to reduce bitterness. Rinse them well afterward and pat dry with a paper towel.

  2. Cook the Eggs: Heat 1 tablespoon of cooking oil in a large frying pan over medium heat. Pour the beaten eggs into the pan and scramble them until they are cooked through. Remove the scrambled eggs from the pan and set aside.

  3. Sauté Aromatics: In the same pan, heat the remaining 1 tablespoon of cooking oil over medium heat. Add the minced garlic, sliced shallots, and sliced red chilies. Sauté until fragrant and the shallots are translucent, about 1-2 minutes.

  4. Add Bitter Melon: Add the sliced bitter melon to the pan. Stir-fry for about 5-7 minutes until the bitter melon is tender but still slightly crisp.

  5. Combine with Eggs: Once the bitter melon is cooked, return the scrambled eggs to the pan. Stir well to combine all the ingredients.

  6. Seasoning: Add soy sauce and shrimp paste (if using) to the pan. Stir well to distribute the flavors. Taste and adjust the seasoning with salt and pepper if necessary.

  7. Serve: Transfer the tumis pare dan telur to a serving dish. Serve hot as a side dish or as part of a larger meal with rice or noodles.

Tips:

  • Adjust the amount of red chilies according to your spice preference. You can remove the seeds for a milder flavor.
  • If you're not a fan of bitter taste, you can blanch the sliced bitter melon in boiling water for a couple of minutes before stir-frying to reduce its bitterness further.
  • Some variations of this dish include adding diced tomatoes or sliced onions for added flavor and texture.
