TUMIS TAUGE - stir fried bean sprouts
Tumis tauge, or stir-fried bean sprouts, is a popular Indonesian dish known for its simplicity and freshness. Here's a straightforward recipe for making tumis tauge:
Ingredients:
- 300g bean sprouts (tauge)
- 2 cloves garlic, minced
- 2 shallots, thinly sliced
- 2-3 bird's eye chilies (optional), thinly sliced
- 2 tablespoons cooking oil
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce (optional)
- Salt and pepper to taste
- Chopped green onions or cilantro for garnish (optional)
Instructions:
Prepare the Bean Sprouts: Rinse the bean sprouts under cold water and drain well. Remove any roots or browned ends.
Heat the Oil: In a wok or large frying pan, heat the cooking oil over medium-high heat.
Sauté Aromatics: Add the minced garlic, sliced shallots, and bird's eye chilies (if using) to the hot oil. Stir-fry until fragrant and the shallots are translucent, about 1-2 minutes.
Add Bean Sprouts: Add the bean sprouts to the wok. Stir-fry continuously for about 2-3 minutes until the bean sprouts are slightly wilted but still crunchy.
Seasoning: Add the oyster sauce, soy sauce, and fish sauce (if using) to the bean sprouts. Stir well to combine and coat the bean sprouts evenly with the sauces. Cook for another 1-2 minutes.
Adjust Seasoning: Taste the bean sprouts and adjust the seasoning with salt and pepper if necessary. Be careful with the salt as soy sauce and oyster sauce already contain salt.
Garnish and Serve: Transfer the tumis tauge to a serving dish. Garnish with chopped green onions or cilantro if desired. Serve hot as a side dish or as part of a larger meal with rice or noodles.
Tips:
- Make sure not to overcook the bean sprouts. They should retain some crunchiness for the best texture.
- You can customize the level of spiciness by adjusting the amount of bird's eye chilies or omitting them altogether.
- Feel free to add other vegetables such as carrots, bell peppers, or cabbage for variation.
- For a vegetarian version, you can omit the oyster sauce and fish sauce or substitute them with vegetarian alternatives.
